Prawn Noodle Salad

Serves: 4


700g Prawns, cooked, peeled and deveined
2 tomatoes cut into wedges
2 cups bean sprouts
1 medium cucumber, sliced in half remove the seeds and slice
3 spring onions, sliced
½ cup of fresh coriander
½ cup of fresh mint
1 avocado sliced
Fried shallots if you have them (these can be found at Asian super markets or you can make these yourself)

2 tsp black peppercorns crushed
1 tsp finely grated lemon zest
1 Tbsp fresh ginger, grated
¼ tsp sesame oil
1 Tbsp limejuice
1 Tbsp fish sauce
1 tsp brown sugar
1 Tbsp soy sauce
2 spring onions, finely chopped

100g vermicelli


  1. Mix the dressing ingredients together.

  2. Cook the vermicelli by covering with boiling water and let stand until softened. Cut with scissors to separate.

  3. Combine the cooked prawns, tomatoes, bean sprouts, cucumber, spring onion, coriander, mint, vermicelli and dressing. Mix well and serve with sliced avocado and fried shallots. ENJOY!
