Almond Crusted Snapper with Shrimp Sauce
1 egg white
1⁄4 cup breadcrumbs
1/3 cup ground almonds
Pinch of salt and pepper
6 snapper fillets
3Tbsp olive oil
1 onion chopped
4 cloves garlic, minced
1 red or green pepper, chopped
1⁄2 cup small raw shrimps
1Tbsp lemon juice
1⁄2 cup sour cream
1⁄2tsp dried or fresh dill
Beat egg white in a bowl until foamy. Combine breadcrumbs, almonds, salt & pepper and mix. Dip fish into egg white, then into crumbs to coat and leave for 10 minutes.
In a small saucepan, add 1Tbsp olive oil over medium heat. Add onion, garlic and pepper and cook until tender about 5 minutes. Add shrimp and cook until they turn pink and curl about 1-2 minutes. Remove from heat and add lemon juice. Set aside.
In a large fry pan heat remaining olive oil and add fish. Cook for 4 minutes then turn and cook for 2-5 minutes on second side until coating is browned and fish flakes easily when tested.
While fish is cooking return shrimp mixture to a medium heat, add sour cream and dill, stir until mixture is hot.
Remove fish from pan and serve with a spoonful of shrimp sauce. Serve on a bed of spinach or fresh greens. Enjoy
